Puff Pastry
  1. 1Thaw in the fridge overnight, or at room temperature for a few hours. Do not microwave or place in a warm spot — the butter will melt and ruin your dough.
  2. 2Carefully unroll the dough. It should still be cold but soft enough to unroll.
  3. 3The puff pastry is ready to use as directed in your favourite recipe. It may be rolled out thinner depending on your intended use.
  4. 4We recommend baking at a higher temperature (375–400°F) to get a golden brown and crispy result.

A note on thawing times

Keep in mind that room temperature varies by season. In summer your home will be warmer, in winter cooler. The warmer the room, the less time your pastries will take to thaw and proof. Use your judgement — they're ready to bake when they look puffy and feel soft.
